I say this because, I myself have tried making Mysore pak many times and have failed miserably. sometimes it got burnt, sometimes it got really hard. But as they say, failure is the biggest teacher, i have finally learnt my lesson. I actually did succeed in making a soft Mysore pak recipe that got really good response. Hope you like it too. What is the recipe of Mysore Pak?

Mysore Pak Calories: 778 KCal per serving
Serves: 4
Ingredients
- Ghee (Clarified Butter) - 1 cup
- Besan (gram flour) - 3/4 cup
- 1/2 cup water
- Oil - 1 cup
- sugar - 200 gms or 1 1/2 cup
Method of making Mysore Pak
- seive the besan after combining it with hot oil to remove any lumps.
- take a wok and add sugar and some water in it.
- stir continuously while the sugar is melting.
- after say 5 minutes you'll see the sugar syrup has been formed.
- check the consisteny of the sugar syrup by placing a drop on your fingertips and checking the number of strands while you separate your fingers. If you are getting one strand then you are good to go further.
- In this sugar syrup keep adding the besan slowly and keep stirring vigorously. (keep the flame low)
- blend all the besan properly with the sugar syrup.
- meanwhile put your ghee for melting in an another wok.
- after the ghee has melted start pouring in the ghee a little at a time and mix it with your blended mixture of besan and sugar syrup.
- your besan will slowly turn into a thick consistency and you'll be able to see bubbles and holes starting to form in the center.
- make sure your besan doesn't stick to the bottom of the wok and it cooked thoroughly so that it leaves the sides.
- now place this into a heavy bottomed plate.
- allow it to cool down and spread it evenly with your spatulla.
- do not allow it to get cooled completely or else it'll get stone hard. You have to make your Mysore pak while it still hot.
- use your kitchen knife to make rectangle pieces and then unmould it on another plate.
