Whenever my mom or grandma used to make it I remember it used to be a festival like ambiance and scenery at my home. I have learnt this Malpua Recipe from my grandma who is a gourmet. This is the typical step by step homemade bengali Malpua Recipe. We majorly use Chenna, suji, khoya, milk, fennel seeds, baking soda and cashew and fry them in ghee. Malpua is one of the most popular Diwali Sweets in every Indian homes. We bengalis also make it on occasions like Holi. It is to be noted that in UP and Bihar they mix banana in the batter and it is called pua. It is very popular during holi and Chhath puja.

How to Make Malpua?

Ingredients for making Malpua
- 2 cup Maida or cake flour or self-raising flour
- 1/4 cup suji or semolina
- 1/2 tsp baking soda
- 2 cup milk
- 2 cup ghee
- 200 gm khoya
- 2 tsp fennel
- 1 tsp green cardamom powder
- handful cashew nut, almonds and pistachio
- 1 cup sugar
- grated paneer (prefer homemade chenna) - 1 cup
For Garnish
- Saffron Strands 1 Pinch
- Rose Petals handful
Method of making Homemade Malpua step by step
- place the Khoya in a wok and cook it until it gets soft
- now start making the malpua batter
- make it using maida, fennel seeds, cardamom powder, chenna, chopped cashew nuts and khoya
- blend the batter nicely with your hands,
- slowly add the milk to the batter and make a cake batter kind of consistency.
- now add the baking soda along with 2 tsp of water and beat it once or twice.
- keep it aside for 2 minutes
- take a thick bottom pan and melt your ghee
- now use a spoon and pour in two spoons of the malpua in ghee.
- You can add more spoons if you want your malpuas to be dense.
- keep the center of the malpua filled and let it spread out evenly to the sides.
- once you see the corners are turning golden brownies flip your malpua.
- repeat the same process until your malpua is done.
- now make a sugar syrup by melting sugar along with water until you get a one strand consistency of the sugar syrup
- place your hot fried malpuas in the sugar syrup
- allow it to soak all the sugary sweetness and get all fluffy and mushy
- now get your malpuas out and decorate it with chopped pistachios and almonds.
- You can also make rabri and serve it along with the malpuas.
