Gulab Jamun is one of the most popular Indian sweets. It's typically made during festivals, parties and weddings in India. The Gulab Jamun Recipe basically, involves making a dough of Maida and Milk solids, which in turn is flavored with Cardamom Powder and then small dumplings are made and deep fried. It is then dipped in sugar syrup, until it gets a bit soft and mushy.

It is said that if you haven’t tasted Gulab Jamun yet, you haven’t tasted desserts yet! This indulging dessert introduced in India by the Mughal empire chefs is actually of Persian origin, but we Indians know that there is nothing more dear to us than our dear Gulab Jamuns with Vanilla Ice creams. Homemade Soft Indian Gulab Jamun Recipe
If you want to make soft Gulab Jamuns from scratch these are the Ingredients you’d require:
- Clarified butter for deep frying
- ½ cup cake flour/Maida
- 1/8tsp baking soda
- ½ tsp cardamom powder and 3-4 cardamom pods
- 8 strands of saffron(optional)
- 1 ½ cup of white cane sugar
- 2 ½ cup of water at room temperature
- Powdered milk/ milk solids( homemade or purchased) - 7 ounces
Method:
- First, we have to prepare our sugar syrup.
- For this use 1 ½ cup of sugar along with the double quantity of water.
- Throw in some cardamom pods and saffron strands into it and let it boil on high flame.
- Once it boils, simmer the flame and allow it to get thickened till its consistency is a single strand. Keep stirring constantly to avoid burning.
- Now use milk powder or milk solids (made after drying 1 L of milk over the slow fire to form a cup of solid milk), with Cardamom Powder and Maida(Cake flour) to mix together into a soft dough. If it is not coming together go ahead and use 1tsp of milk without hesitation.
- After the dough is made divide it into small round dumplings. Do not make large balls, they will break. If you are using the ready made version, there too you’ll find a powdered mix. You have to knead it into a dough using little warm milk and proceed as further explained here.
- Now melt your Ghee (clarified butter). You might also replace it with oil if you want to avoid butter.
- Put in your dumplings slowly and stir it slightly until it turns slightly golden in color. Now get them out and cool it. You’ll see slowly it’ll change its color to luscious brown.
- DO NOT WAIT for it to turn brown as the cooking process is still on even after you’ve removed them from fire and they’ll turn out to be burnt once it gets cooled.
- Now place them slowly into the sugar syrup. Make sure that the sugar syrup isn’t too hot or else wait for it to cool down a bit.
- Putting the Jamuns in hot syrup shall make them shrink.
- Allow it to bask in the sugar syrup for ½ hours and then you’re good to go.
- Serve it along with vanilla ice creams.
