So it’s time to bid goodbye to those endless instructions of complicated dessert and welcome the next-gen fusion dessert with open arms.
It’s simple and insanely easy to make and is not at all time-consuming. The best part is the process itself is filled with unimaginable joy and it won’t feel like hard work to you no matter when you make. You can make it easily in an hour or two without much effort just in time before the dinner starts and by the time it is time for dessert present it on the table in full mystery taking everyone by surprise. So without further ado let us start with it already.
Recipe of astonishingly yummy Thanksgiving dessert with Indian fusion, pumpkin, and carrot Muffin with Gulab jamun stuffing
Ingredients:
- Grated carrots 2 cups
- Grated pumpkin 1 cup
- Milk 1 cup
- Dried Milk solids or condensed milk 1 cup
- 1 tsp of cardamom powder
- 1 cup of crystal sugar
- 4-5 saffron strands
- 5-6 Gulab jamun ( readymade or make it at home using Gulab jamun mix)
- Eggs (2 pcs) [if you wish to make Pumpkin Gulab Jamun Muffin]

Now we have to make the carrot and pumpkin wrap or terrine.
- Take the grated pumpkin and carrots and heat them in a thick bottomed pan along with a cup of milk over medium flame. Keep stirring it occasionally to avoid burning.
- Once they get cooked and come together as a lump you can add your milk solids or condensed milk, some cardamom powder and of course some sugar.
- Stir it all in together till you get the fragrant aroma of cooked pumpkin and carrots along with the clarified butter. Turn off the fire and allow it to cool down completely.
Finally, we’ve arrived at the last leg of our dessert:
Here's how to make a Pumpkin and Gulab Jamun Muffin
- If you wish to give it a cupcake mold, then just add 2 eggs in the Pumpkin Carrot Mixture.
- Now grease your Muffin tin place the Pumpkin & carrot mixture in the mold.
- Nou cut the Gulab jamun into halves and throw one half in it.
- Top it with another layer of Pumpkin - Carrot mixture (just a tad bit shall be enough).
- Finally, place it in a preheated oven at 350 degrees F for 30 to 40 minutes.
Here's how to make Terrine wraps
- You can use a terrine mold and sushi mat if you have one of if you do not have it don’t worry, there are many other alternatives.
- You can use your kitchen towels along with plastic wraps. Let me tell you how to do it with this one.
- Fold your kitchen towel and place your plastic wrap on top of it.
- Now spread the cooled mixture of pumpkin and carrot onto it. Line in its center the luscious Gulab Jamuns. Now gently spread another layer of the pumpkin carrot mixture over it and on its sides. Sprinkle some finely chopped pistachios and almonds on the top and sides. Coil the edges of it.
- Now gently lift the plastic wrap from over the towel in one gentle stroke and place it again to remove any moisture sticking under it.
- And now start rolling it from the side into a tight twirl.
- Once this is done place it carefully in your refrigerator for a good 3-4 hours until it gets set completely.
- Now get it out, gently remove the plastic foil and plate your pumpkin and carrot terrine.
- You can slice them up into one or two pieces and serve it, seasoned with some more nuts and pistachios. You can decorate the place with some rose petals for that perfect divine touch into the dish and ta-dah you got yourself an exquisite Indi-fusion terrine.
