Thanksgiving is just round the corner and it’s the perfect time to start planning on your side dishes and desserts that’ll go well with your turkey. Its time though that this year you give the usual pumpkin pie a thought. Pumpkin is an astonishing Thanksgiving ingredient which can be used in a plethora of delicious desserts, which are a perfect accomplice to the Thanksgiving turkey and other side dishes.
Today I’ll tell you how to make a delicious pumpkin pie flavored with the spicy flavors of Indian masala chai or spiced tea. Masala Chai is one of my favorite beverages which I can have about 12 cups in a day. Yes! That’s how much I love it. I begin my day with the sip of this masala chai, every single day. The groovy flavors of cinnamon, pepper, nutmeg and other spices when infuse with milky sweet tea, its product is just delectable awesomeness which you just cannot resist.

So to bring in some invigorating zest to the boring pumpkin pie, last year, I tried the fusion of this American dessert with our ever preferred Indian caffeine beverage, and the result was, Man o man it was so yummy that my friends besieged me to make this dish over 10 times throughout the year, irrespective of the fact whether it was pumpkin season or not. Ha-ha. It’s always a pleasure when I see my friends quarrel over food or wait hungrily with eyes zeroed onto the oven, as to when will the dish get baked and they’ll have it.
This dish isn’t really a very famous pie recipe, but if you are looking to make something out of the box for desserts this thanksgiving, do give this a try. The mildly flavored pie with the gentle hints of ginger cinnamon and nutmeg brings in an exotic taste of Indo Western fusion. It isn’t very sweet though but the maple syrup paired with vanilla bean and generous amounts of whipped cream is undoubtedly the unanimous champion of the dish. The gingerly spiciness of the chai infused with sweetened pumpkin puree is rare variety of mouth watering pie, you wouldn’t find anywhere else. So make it up and surprise your friends and family this Thanksgiving.

Recipe to make Pumpkin Chai Pie
Ingredients:
- One pie crust
- About 450 ml or 15 ounce of Pumpkin puree( canned or homemade)
- ½ cup of whipped cream
- 1/3 cup of maple syrup
- 2 tsp brown sugar
- 2 tsp vanilla extract
- 1tsp grounded cinnamon
- ¾ tsp grounded ginger
- ½ tsp grounded nutmeg powder
- ¼ tsp cardamom powder
- ¼ tsp grounded cloves
- ½ tsp kosher salt
- 1/8 tsp of pepper
For Maple whipped cream
- 1 cup of whipped cream
- 2 tsp maple syrup
- 1 vanilla bean deseeded
Method:
Step 1: First let us pre heat our oven to 375 degrees F.
Step 2: Now we have to grease an 8 inch pie platter with butter generously.
Step 3: Now we’ll fit in the pie crust and layer it with parchment paper. You’ll have to fill it with rice or pie weights and allow it to gain its gorgeous crust for 30 to 35 minutes. Now get it out from the oven and remove the weights and allow it to sit in the oven again for another 10 minutes until it turns scrumptiously golden.
Step 4: Reduce the temperature of the oven to 325 degrees F.
Step 5: Now we’ll get started with the pie filling. For this mixture, mix together pumpkin puree; you can make pumpkin puree at home as well. It’s really very simple. Preheat the oven to 325 degrees F. Meanwhile slice up the pumpkin into half and deseed it. Wrap it in a foil and bake it until it gets soft, shall take roughly about an hour, remember to keep the foil side up. Once tender scrape out the pumpkin flesh and cool it and then puree it in a blender.
Step 6: If you have canned pumpkin puree you may skip the above step. For the pumpkin chai pie filling we’ll have to mix together pumpkin puree, heavy cream, eggs, maple syrup, brown sugar, vanilla and all the other spices that you’ve accumulated i.e. cardamom powder, cinnamon, ginger, pepper, cloves, nutmeg and salt. Now we’ll just pour it into the freshly baked pie crust of ours.
Step 7: Now simply put this exquisite pie into your oven and allow it to bake for 50 minutes. Once done remove it and allow it to rest in the refrigerator and cool itself down.
Step 8: Meanwhile whisk your cream along with vanilla and maple syrup.
Step 9: Slice up the pie and serve it with the whipped cream, maple syrup topping.
