Paella Valenciana is the NATIONAL DISH of Spain. This delicious dish is made of rice and chicken. It is also made with some sea fishes and this seafood Paella Valenciana is also very delicious. However, the Paella Valenciana Original recipe is made with Chicken and rabbit meat.
Food is something I just cannot live without. I mean obviously, nobody can but for me good food is more like a therapy, cooking delicacies and feeding them to my friends and family gives me immense pleasure and gratification that is unmatched to any another feeling. Paella Valenciana Original Recipe from straight my Kitchen!
Paella Valenciana Ingredients:
- Saffron(1/4 tsp), the hero of the hot dish
- 1lb boneless chicken thigh cut into cubes of 1 ½ “
- 1lb Rabbit cut into pieces
- Kosher salt and pepper
- ½ cup olive oil
- ½ lb lima beans
- ½ lb green beans trimmed
- 2tsp smoked paprika
- 3 cloves garlic, minced
- 3 medium tomatoes, grated
- 7 cups chicken broth
- 30 snails
- 2 ½ cups Valencia Rice or short grain rice. ( never use Basmati or Long grain rice for Paella)

Paella Valenciana Original Recipe Procedure:
- Put aside the saffron in ½ cup warm water and let it ooze out is color.
- Meanwhile, season your chicken and rabbit with salt and pepper and fry them till golden brown in hot oil in a Paella Pan.
- Add garlic and beans and cook till they turn soft.
- Add the grated tomatoes into it along with the especially smoked paprika and let it all cook together without much stirring for about 2 minutes.
- Now add the chicken broth and saffron mixture, our hero of the dish along with the snails. Season it according to your taste with salt and bring it to a boil.
- Now add the rice slowly and evenly over it and let it soak in the juices of the chicken and rabbit and the gravy. Cook for 10 minutes on high heat till rice soaks in all the water.
- Now reduce the heat and cook for about 5-7 minute till the rice are done without stirring and then put out the flame.
- Remember, never to stir your Paella as doing that will make it stodgy as starch shall be releasing from the rice. Garnish with some rosemary.
- Remove the pan from heat and cover it with a foil for 5 minutes. Let your Paella sit inside the foil wrap for 5 minutes and then unveil it in full suspense!
- Serve hot your Paella Valenciana along with a wedge of lemon and just dig in!
