Frosty winters are the best time to snuggle with your pillow under a comfortable quilt dreaming of your blissful green past, but what about the moment when the doorbell rings and you are suddenly awaked from your sleep and the moment you take a glance at the clock and see it languidly ticking to 12 and you look out to a cold dry winter day. Uncomfortably so the hunger pangs then start taking its toll on you making everything dull and disinteresting. Well, do not worry. Today I’ve brought to you, Authentic English Christmas sentiments, steamed Christmas pudding. It is the perfect recipe for such occasions or be it a winter party or Christmas night or just a boring dry and grey winter noon. This wonderful steamed pudding is an authentic English Christmas dessert which is so easy to make and the perfect dessert to dive in during winters or Christmas. Do not think of calories during winters. It’s just good innocent holiday calories which are a must for winters, isn’t it? So without any further lets hit the kitchen already.
English Steamed Christmas Pudding
Ingredients:
- 1 ½ cup of cake flour Maida, mix it with 1tsp of baking powder to make your own self-raising flour
- 1 cup of sugar
- 1 tsp of cinnamon powder
- 2 eggs yolks beat
- ¼ cup of softened butter
- ½ cup of mincemeat pie filling bought from supermarket
- ½ cup of cranberry sauce
- ½ cup of pureed pumpkin
- 227gms of sour cream
- 1 - a 225gm tub of cream cheese
- 1/3 cup powdered sugar
Method:
- Take a pudding basin and glaze it with butter. Sieve yourself raising flour with a dash of cinnamon powder and a cup of sugar.
- Now we’ll beat together the softened butter and eggs along with our mincemeat pie filling, Cranberry’s sauce, and Pumpkin Puree. Now we’ll pour this mixture into our sieved flour mixture and beat all together until we get a batter kind of consistency
- Now we’ll make our water bath. For this take any heavy bottom pan and fill half of it with boiling water. Now we’ll place a rack on it and keep our pudding basin gently on it and cover the pan with steam to form. We’ll allow our pudding to get steamed for 2 ½ hours. Do not worry, of it getting burned. Steam water baths are the best process for baking with the least risks of any kind of mishaps. One thing, we have to keep checking the pan at least twice only to refill the water if the water level has reduced. Please be extra careful with the steam. Always use mittens. We just have to hold our patience and hunger for a little longer before we can pounce on it.
- Once its time, we’ll put out the fire and get the pudding basin out. Again be extra careful and patient here. We’ll allow the pudding to cool down and then we’ll de-mold it slowly.
- Now, for the glazing, we’ll drizzle powdered sugar on the pudding. Now we just have to beat up our sour cream with cream cheese and some powdered sugar and place a spoonful of its dollop on the pudding. We can also decorate it with some fir leaves and cranberries for the ultimate Christmassy effect and we are done.
